Protein Broccoli Bacon Salad (Macro-friendly, Lightened Up)



I always look for this salad at summer BBQ's. Since it's heavy on the mayonnaise and sugar, I decided I needed to lighten this up. I wanted something that was lower in sugar and calories and higher in protein so that it could accompany just about anything a summer grilling fest serves up. This lightened up version hits the mark!

I eat it right out of the refrigerator. I just open the lid, take a few bites and put it back. It's that good! It's got that salty, sweet, oniony flavor that tingles the tastebuds. 

This is the perfect dish to bring to BBQ's but it's also going to make an appearance on Father's day, on Independence day and with some grilled chicken right off the grill. 

I usually have most of the ingredients at home so mixing this up is easy. It gets better as it sits in the fridge, making it the perfect make ahead veggie for parties or weeknight meals. It doesn't take that many ingredients either. 

All that's needed --
  • A bag of frozen broccoli florets
  • pickled onion
  • light mayonnaise 
  • nonfat Greek yogurt
  • bacon bits
  • raisins 
  • sweetener or sugar
If you prefer using full fat ingredients you most certainly can.

This dish is made a little lighter and little healthier thanks to using a bit of Greek yogurt instead of all mayonnaise, using bacon bits and sweetener. It also has a nice amount of protein. 

I promise you, it doesn't taste low-calorie. It's got all the healthy stuff --

RECIPE
Makes 4 servings
Per Serving: 90 cals, 1.9 total fat, .8 total fat, 12.3 carbs, 2.6 fiber, 6 sugar, 6.7 protein

1 bag frozen broccoli florets (350g, 12 oz microwave in bag)
1/4 tsp onion powder
2 tbs (20g) light mayonnaise
1/4 cup (58g) nonfat Greek yogurt
2 tbs (20g) bacon bits  
2 small boxes raisins (1 oz total)
2 tsp (8g) granulated sweetener 
1/4 cup pickled onions*

  1. Cook broccoli florets according to package directions. Once cooled enough to handle, chop into 1 inch pieces.
  2. In a medium sized bowl combine mayonnaise, Greek yogurt, bacon bits, raisins, sweetener and pickled onions. 
  3. Add broccoli and toss to combine. Serve immediately or cover and store in refrigerator. Salad will keep for 3 days.
