Low-carb, Keto-Friendly, Easy BLT Salad


RECIPE 

Makes 1 serving
209 cals/13.2g total fat/3.5g sat fat/10.6g carbs/1.1g fiber/3.5g sugar/10.8g protein

2 slices cooked bacon, chopped
Handful grape tomatoes, chopped and lightly seasoned with Kosher salt
1 tbs olive oil mayonnaise
1 tbs nonfat Greek yogurt
Couple drops bottled lemon juice
3 handfuls romain, torn into pieces
1 slice light bread
1/8 tsp each garlic powder, garlic salt, steak seasoning and onion powder
1/4 tsp dried parsley flakes
small bit of chives [about inch wide amount], minced
1 1/2 tsp unsweetened almond milk

Spritz both sides of bread with I Can't Believe It's Not Butter. Cut into cubes. Air fry at 380 F for 5 minutes, tossing halfway. When they are crisp, they're done. Make dressing: combine mayo, Greek yogurt, lemon juice, garlic powder through onion powder, dried parsley and half the chives. Thin with almond milk. Assemble salad. Add lettuce, tomatoes, the rest of the chives, dressing and light bread cubes.
