Lighter Chicken Parm Meatball Garlic Bread Sliders

 


SHORTCUTS

  • You can use 93% ground chicken instead of chicken tenderloins.
  • You can use frozen cocktail meatballs. Thaw and proceed. Keep in mind nutritional information will change.

SEASONING

  • Meatballs measurements are approximate. I usually add seasoning to taste but have done my best here. My suggestion is to mix this up, pinch off a piece and cook in air fryer. Adjust for seasoning to taste.

COOKING MEATBALLS

  • You don't need to air-fry these. You can bake or broil the meatballs. Keep in mind they're cocktail size.

CUTTING CALORIES & CARBS

  • Calories can be reduced by topping with less mozz cheese. 
  • You can make 1/2 batch of meatballs, slice each in half and put them on just the bottom of the bread and reserve the top for another use. That'll really slim these down.
  • Eliminate the bread and follow bullet 2 above but put each half meatball atop a baked zucchini slice that has been topped with sauce, parm and spices. 

ADVANCE PREP

  • Make the meatballs and cook them through. Toast the bread. Keep the components separate. Before baking off, warm the meatballs to take chill off and bake as directed below.

MEATBALLS
20 oz boneless, skinless chicken tenderloins
8 tsp grated parmesan or pecorino-romano cheese
1 1/2 tsp Kosher salt
1 tbs each onion powder and dried parsley flakes
2/3 tbs garlic powder
2, 50 calorie mozzarella stick cut into 16 pieces

In a food processor add chicken through garlic powder. Pulse until you get a course grind but don't make a paste. Form into small meatballs, enough to have 1 meatball for each roll, insert a piece of mozz in the center. Air fry preheated to 380F for 6 -7 minutes or until the meatballs are cooked until 160F. Shake them at half-way point.

SLIDERS
1 package Hawaiian Sweet rolls, cut in half so you have tops of rolls and bottoms 
garlic powder, onion powder 
1/4 cup grated parmesan or pecorino-romano cheese
2 cups grated part-skim mozzarella [80 cals per 1/4 cup]
6 tsp garlic infused olive oil
I can't believe it's not butter spray
1 cup Rao's pizza sauce 

Preheat oven to 400F. Once sliced, punch out a small hole on the top of each roll. Put the Hawaiian rolls back together, [reserve the holes for breadcrumbs or bread pudding] lightly spray with I can't believe it's not butter, bake for 10 minutes or until golden. Meanwhile toss meatballs with sauce. No need to warm it. Once rolls are removed lower oven temperature to 350 F. In a 9x13 pan add the toasted rolls. Sprinkle top with garlic powder, onion powder, grated parmesan cheese. Put a meatball in each hole and top with mozz cheese. Drizzle garlic infused olive oil on top. Spray a piece of foil with cooking spray before tenting the rolls. Bake until cheese in melted, about 10-15 minutes. Serve hot with a side of marinara.
