Oh how I love this bowl! Lately I'm making lots of bowls because they are easy to customize to suit every taste and dietary restriction in my family. This recipe is no exception. Everyone can make up their bowl the way they like. If you don't like shrimp substitute cooked ground beef, black beans, chicken or crispy tofu. If you don't want a bowl, roll all the toppings into a taco [hard or soft shell].
The shrimp is succulent, juicy and loaded with garlic flavor. Mixing the riced cauliflower with cooked rice keeps the carb count low but still imparts the subtle texture and flavor enhancement rice accomplishes. 4 oz raw uncooked shrimp (21-30 count)
1/4 t olive oil
1/4 t garlic powder
1/4 t fresh minced garlic or garlic preserved in oil (or just double garlic powder)
1/4 t olive oil

1/4 t chili lime spice blend (about 4-5 dashes)
2/3 c Trader Joe’s Roasted Frozen Corn (any frozen corn will do)
2/3 c frozen cauliflower rice
1/4 c cooked white rice (omit if you don't want a more rice-like taste)
35 g ripe avocado (approx. 1/4 avocado)
1 T Bolthouse Farms Ranch Dressing
Toss shrimp, olive oil and fresh garlic and garlic powder in a bowl. Set aside. Preheat air fryer to 350 degrees if necessary. Toss chili lime spice with cauliflower and white rice. Cook cauliflower rice mixture according to package directions. Do the same with the corn. While the rice and corn are cooking (I microwave in 2 bowls together in the microwave, heating the rice longer than the corn). Cook shrimp in air fryer sprayed with a little oil [or saute in a non-stick pan on medium heat] for 6-8 minutes, until pink and firm tossing halfway. Add your heated corn to the cauliflower, top with shrimp, avocado and ranch dressing.
