Mock Pumpkin Spice Latte (Foam Without Steam)

Don't get me wrong, I don't mind spending the money for a latte at Starbucks and the artificial sweeteners added doesn't perturb me all that much but there's something to be said for drinking something natural and for not having to leave the house to get it! While this isn't a true cafe latte (which translates in Italian as milk coffee), this pumpkin spiced foamy treat hits the spot and is all natural - plus you don't need an espresso machine or fancy equipment. A coffee maker and mason jar's it!

All you need is an immersion blender or mason jar with lid to make foamed milk at home*.

The Coffee:
Make a double strong pot of coffee:
16 ounces of water
4 T of coffee
2 t pumpkin pie spice

Add the water to your coffee maker, add the pumpkin pie spice to the coffee and brew a pot. Once brewed, make the milk. Note - you'll have extra coffee. Chill the rest and make iced coffee later.

The Milk:
Note - this method will produce less foam.

Heat 3/4 cup of 2% milk (any milk works) in the microwave for 1 minute

Transfer the milk to a tall heat safe glass and place your immersion blender into the milk. Blend for 1 minute.

To Make The Mock Latte:
Put the coffee and any sweetener in a mug. Pour the milk (hold back the foam) into the mug and top with foam. Sprinkle a little pumpkin spice on top.

*Mason Jar Method: Use a mason jar to make foam (this really works & makes a great mock cappuccino).  This method produces fabulous foam!
