This recipe is at least 50 years old. It's courtesy of my friend's grandmother who lived to be 99. She served this fabulous fruit treat after dinner on most major holidays. Guests would eagerly devour these delicious gems. Soon it was starring on other dinner tables over the holidays, including mine. My family serves this during the fruit and nut course, which comes after the meat and just before dessert.
I love how simple yet impressive this dessert is. It can be made ahead and is a very refreshing way to end a meal. For an even greater presentation, take a whole pineapple, quarter, core, and remove the pineapple skin on each quarter as one piece. Then thinly slice the pineapple and place on top of the pineapple skin for presentation. Clearly I didn't do that here. I took fresh pineapple from the fruit section of the grocery store, cubed it and then proceeded to add the cherries. Either way you make it, it's a huge hit!
NOTE:
- Can be made in advance. Drizzle some maraschino juice over the pineapple just prior to serving.
- Avoid adding a cherry to each piece of pineapple so those who don't like maraschino cherries can enjoy this also.
- I make this and have it as an afternoon snack in the summer. It's also great to have during a summer BBQ.
INGREDIENTS:
1 fresh pineapple either quartered as described above or cubed like I did
1 jar of maraschino cherries
toothpicks
Skewer a maraschino cherry and fasten to each pineapple chunk. Drizzle with some maraschino cherry juice, plate and serve.
Made this yesterday and the kids really liked it.
