Single Serve Shrimp Roll


I remember the first time I had a lobster roll. It was at a food truck my company commissioned as part of Administrative Professionals Day. One bite and I was hooked, pun intended. A toasted buttered roll and lobster, what is there not to love? Lobster is very expensive but shrimp is more affordable. Shrimp is also high in protein and low in calories. So depending on the roll that's chosen, this meal is pretty light yet tastes decadent and calorie heavy but isn't! I hope you try it.

NOTES
  • I air fried my raw shrimp for 6 minutes at 360 degrees. Preheat air fryer for 5 minutes, spritz basket with olive oil cooking spray and cook. 
  • I recommend doubling this. It would also be great as a scoop for salad or on a sandwich
  • Please don't skip the melted butter. It adds decadence to this.
RECIPE

For full serving [not including roll]: 151 calories/8g total fat/2.1g saturated fat/2.2g carbs/.2g fiber/.4g sugar/16.1g protein

Ingredients
4 ounces raw shrimp, cooked and halved [if you just cooked them let them cool while you mix the filling]
2 teaspoons nonfat Greek yogurt
2 teaspoons olive oil mayonnaise
3/4 teaspoon lemon juice
1/2 teaspoon minced garlic [approximately 1 garlic clove]
1/2 teaspoon chopped fresh parsley
3 teaspoons chopped celery
2 teaspoons light canola oil butter, divided
1 tablespoon fresh basil, chopped
1 good hot dog roll

Mix together the ingredients through the celery in a bowl. Use 1 teaspoon of the butter to spread onto the inside of the dog roll. Toast. Melt the other teaspoon of butter. Add the shrimp mixture into the toasted bun and drizzle with melted butter. Serve.

I pretty closely followed MyBizzyKitchen's recipe posted on Instagram dated April 5, 2020. The only adjustments I made was to use 1/2 mayonnaise and yogurt, substitute celery for snap peas [reduced amount] and used less butter but the full amount wouldn't hurt].
